WHere is a home-style version of a beverage from the seasonal cocktail list. This is a party-sized prepared mix that is loaded full of essence of a Christmas time, which makes it excellent for your festive gathering. Reserve the remaining cordial you can use for morning drinks, puddings, or for another batch of bikinis.
Bikini Recipe
Serves 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (makes 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Combine every components inside a pot, heat until it reaches a light boil, agitating to dissolve. Then, remove from the heat and let it to cool completely. Transfer into a clean bottle, cap it keeping it chilled, it will last for around four weeks.
For the Premix: Mix the specified liquid ingredients into a large bottle, allow it to infuse for an hour, then strain best through a fine cloth, to ensure it's completely strained.
To serve: Measure 85ml of the batch mix into a cocktail shaker filled with ice, and stir lightly for a minute to cool it down. Pour to a chilled martini glass or equivalent, garnish with a few cranberries and finish with a light spray of mandarin oil above the glass.
